In 2001, Pernod revived its expertise with a new anise-based spirit made from absinthe plant extracts, faithful to the heritage of the 19th-century Maison Pernod. Inspired by the original recipe that built its reputation, it is crafted using traditional infusion and distillation methods, allowing for the precise extraction of the plants’ natural aromas.

This sugar-free anise spirit, bottled at 68% ABV, complies with the thujone limits set by legislation, ensuring an authentic and well-balanced tasting experience. Its aromatic profile is defined by the freshness of anise, the subtlety of absinthe, and the complexity of carefully selected botanicals, resulting in a spirit that is refined, powerful, and true to French tradition.

Tasting notes

Pernod Absinthe Extract seduces with its crystal-clear appearance and intense aromas of anise and absinthe botanicals. On the palate, it reveals a powerful and lively attack, followed by refined aromatic complexity, where vegetal, slightly bitter, and resinous notes intertwine. The finish is long and harmonious, leaving an impression of freshness, elegance, and character—true to the tradition of French aniseed spirits.

Serving Suggestions

Pernod Absinthe Extract is traditionally enjoyed diluted with fresh water, poured slowly to release its anise and absinthe aromas while creating its characteristic cloudy appearance. It can also be savored over ice or used in cocktails, particularly in classic recipes such as the Sazerac or the Mauresque. For an optimal experience, use a tall glass and add 3 to 5 parts water, depending on the desired intensity.
